Modification for idali podi
The preparation U3 (Idali podi) in the book A Short Course in Culinary Experiments had no variations or experiments. There was a reason for this. At the time of writing the book, I thought that any addition or deletion to things on the ingredients list was superfluous. The discovery of various health benefits for black cumin altered that thought.
Two version of the idali podi can be tried with the addition of black cumin. In the first version, you can simply add 2 tablespoons of black cumin to the list of minor ingredients in preparation U3. In the second version, sesame and cumin seeds can be left out of the ingredients list of U3, and in their place you can add 2 tablespoons of black cumin seeds.
